Description

Mother’s Refrigerator Rolls are soft, buttery, and perfectly tender yeast rolls that can be made ahead and kept in the refrigerator until ready to bake — a timeless family favorite that’s perfect for holidays, Sunday dinners, or any special occasion.


Ingredients

  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup warm water (about 110°F / 43°C)
  • 1/2 cup sugar
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 1/2 tsp salt
  • 4 1/2 to 5 cups all-purpose flour (divided)
  • 2 tbsp melted butter (for brushing tops)


Instructions

  1. In a small bowl, dissolve yeast in warm water and let stand for 5–10 minutes, until foamy.
  2. In a large mixing bowl, combine sugar, milk, melted butter, eggs, and salt. Stir until well blended.
  3. Add the yeast mixture to the wet ingredients and stir to combine.
  4. Gradually add 4 cups of flour, one cup at a time, mixing until a soft dough forms. Add additional flour as needed until the dough is soft but not sticky.
  5. Turn the dough onto a lightly floured surface and knead for about 5–7 minutes, until smooth and elastic.
  6. Place dough in a greased bowl, turning once to coat. Cover and refrigerate for at least 2 hours or up to 3 days. Punch down dough as it rises in the refrigerator.
  7. When ready to bake, remove dough from the fridge and shape into rolls (about 2 inches in diameter). Place on a greased baking sheet or in a 9×13-inch pan.
  8. Cover and let rise at room temperature for 1–1.5 hours, or until doubled in size.
  9. Preheat oven to 375°F (190°C). Bake rolls for 15–18 minutes, or until golden brown.
  10. Brush hot rolls with melted butter immediately after baking for a soft, glossy finish.
