Description

Soft, chewy homemade pretzels stuffed with gooey melted mozzarella cheese, baked to golden perfection and topped with coarse salt. Perfect as a savory snack or appetizer.


Ingredients

  • 3 3/4 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/2 cups warm water (110°F / 45°C)
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 8 ounces mozzarella cheese, cut into sticks
  • 8 cups water
  • 1/3 cup baking soda
  • 1 large egg, beaten (for egg wash)
  • Coarse sea salt, for topping


Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. Add flour, salt, and melted butter. Mix until a dough forms, then knead for 5–7 minutes until smooth and elastic.
  3. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  4. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. Bring 8 cups of water and baking soda to a boil in a large pot.
  6. Punch down dough and divide into 8 equal pieces. Roll each piece into a rope, flatten slightly, place a mozzarella stick in the center, and seal tightly. Shape into pretzels.
  7. Carefully boil each pretzel for 20–30 seconds, then remove with a slotted spoon and place on prepared baking sheet.
  8. Brush with beaten egg and sprinkle with coarse salt.
  9. Bake for 12–15 minutes or until golden brown.
  10. Let cool slightly before serving to allow cheese to set.
