Ingredients

  • 14 oz (400 g) smoked sausage, sliced into rounds
  • 1 lb (450 g) baby potatoes, halved
  • 12 oz (340 g) fresh green beans, trimmed
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with 1 1/2 tablespoons olive oil, half of the garlic, salt, pepper, paprika, and Italian seasoning.
  3. Spread the potatoes on the baking sheet and roast for 15 minutes.
  4. In the same bowl, toss the sausage slices and green beans with the remaining olive oil and garlic. Season lightly with additional salt and pepper if needed.
  5. Remove the baking sheet from the oven, add the sausage and green beans, and toss everything together evenly.
  6. Return to the oven and roast for another 20-25 minutes, stirring halfway through, until the potatoes are tender and golden and the sausage is browned.
  7. Garnish with fresh parsley before serving.
