Description

Oven-baked cheesy tacos are crispy taco shells filled with a savory seasoned filling and plenty of melted cheese, baked to perfection for an easy and crowd-pleasing meal.


Ingredients

  • 8 hard taco shells
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 1 1/2 cups shredded cheddar or Mexican-blend cheese
  • Optional toppings: lettuce, diced tomatoes, sour cream


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and sauté until softened, about 3 minutes.
  4. Stir in garlic and cook for 30 seconds until fragrant.
  5. Add black beans, corn, chili powder, cumin, paprika, salt, and pepper.
  6. Cook for 3–4 minutes, mashing beans slightly, then remove from heat.
  7. Arrange taco shells upright in a baking dish.
  8. Spoon bean mixture evenly into each shell.
  9. Top generously with shredded cheese.
  10. Bake for 10–12 minutes until cheese is melted and shells are crispy.
  11. Remove from oven and add desired toppings.
  12. Serve immediately.

Notes

  • Use foil or a taco rack to keep shells upright.
  • Add jalapeños for extra heat.
  • Serve with salsa or guacamole.
