Description
Oven-baked cheesy tacos are crispy taco shells filled with a savory seasoned filling and plenty of melted cheese, baked to perfection for an easy and crowd-pleasing meal.
Ingredients
- 8 hard taco shells
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup corn kernels
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- Salt and black pepper to taste
- 1 1/2 cups shredded cheddar or Mexican-blend cheese
- Optional toppings: lettuce, diced tomatoes, sour cream
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Add onion and sauté until softened, about 3 minutes.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add black beans, corn, chili powder, cumin, paprika, salt, and pepper.
- Cook for 3–4 minutes, mashing beans slightly, then remove from heat.
- Arrange taco shells upright in a baking dish.
- Spoon bean mixture evenly into each shell.
- Top generously with shredded cheese.
- Bake for 10–12 minutes until cheese is melted and shells are crispy.
- Remove from oven and add desired toppings.
- Serve immediately.
Notes
- Use foil or a taco rack to keep shells upright.
- Add jalapeños for extra heat.
- Serve with salsa or guacamole.
- Best enjoyed fresh and hot.
