Parmesan Chicken Meatloaf is a flavorful twist on the classic comfort dish — made with ground chicken, Italian herbs, Parmesan cheese, and a tangy marinara glaze for a moist and savory dinner that pairs perfectly with pasta or veggies.
Ingredients
- 1 1/2 lbs ground chicken
- 1/2 cup breadcrumbs (Italian seasoned preferred)
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup marinara sauce (divided)
- 1/2 cup shredded mozzarella cheese
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, milk, egg, garlic, Italian seasoning, salt, pepper, and 1/4 cup of marinara sauce. Mix gently until just combined — do not overmix.
- Shape the mixture into a loaf and place it on the prepared baking sheet or in the loaf pan.
- Spread the remaining 1/4 cup marinara sauce evenly over the top of the loaf.
- Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
- Sprinkle shredded mozzarella cheese on top and return to the oven for 5–7 minutes, or until melted and bubbly.
- Let rest for 5–10 minutes before slicing. Garnish with chopped parsley and serve.
Notes
- Use lean ground chicken, but not extra-lean, to keep the meatloaf juicy.
- Substitute ground turkey if preferred.
- For added flavor, mix in 2 tablespoons of finely chopped sun-dried tomatoes or spinach.
