Description

Parmesan Chicken Meatloaf is a flavorful twist on the classic comfort dish — made with ground chicken, Italian herbs, Parmesan cheese, and a tangy marinara glaze for a moist and savory dinner that pairs perfectly with pasta or veggies.


Ingredients

  • 1 1/2 lbs ground chicken
  • 1/2 cup breadcrumbs (Italian seasoned preferred)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup marinara sauce (divided)
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, milk, egg, garlic, Italian seasoning, salt, pepper, and 1/4 cup of marinara sauce. Mix gently until just combined — do not overmix.
  3. Shape the mixture into a loaf and place it on the prepared baking sheet or in the loaf pan.
  4. Spread the remaining 1/4 cup marinara sauce evenly over the top of the loaf.
  5. Bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Sprinkle shredded mozzarella cheese on top and return to the oven for 5–7 minutes, or until melted and bubbly.
  7. Let rest for 5–10 minutes before slicing. Garnish with chopped parsley and serve.

Notes

  • Use lean ground chicken, but not extra-lean, to keep the meatloaf juicy.
  • Substitute ground turkey if preferred.
  • For added flavor, mix in 2 tablespoons of finely chopped sun-dried tomatoes or spinach.
