Description

This Parmesan Chicken Meatloaf is a flavorful twist on the classic comfort food, featuring tender ground chicken, Parmesan cheese, and Italian herbs. Baked to perfection and topped with marinara sauce and melted mozzarella, it’s juicy, cheesy, and bursting with flavor.


Ingredients

  • 1 1/2 lbs (680g) ground chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/2 small onion, finely grated
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup marinara sauce (divided)
  • 1/2 cup shredded mozzarella cheese (for topping)
  • Fresh basil or parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, milk, egg, garlic, onion, Italian seasoning, salt, pepper, and 1/2 cup marinara sauce. Mix until just combined — do not overmix.
  3. Transfer the mixture into the loaf pan and shape it evenly.
  4. Spread the remaining 1/2 cup of marinara sauce evenly over the top of the meatloaf.
  5. Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Remove from oven and sprinkle with 1/2 cup shredded mozzarella. Return to oven for 5–7 minutes, or until the cheese is melted and bubbly.
  7. Let the meatloaf rest for 10 minutes before slicing. Garnish with chopped basil or parsley.

Notes

  • Use ground turkey instead of chicken if preferred.
  • Serve with pasta, roasted vegetables, or a side salad for a complete meal.
  • Leftovers make great sandwiches the next day!
  • For a crispier texture, bake the loaf on a parchment-lined sheet pan instead of a loaf pan.
