Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup ditalini pasta (or any small pasta)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart with a spoon.
  2. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  3. Stir in garlic and cook 1 minute more.
  4. Pour in chicken broth, diced tomatoes, beans, Italian seasoning, salt, and pepper.
  5. Bring to a simmer and cook for 10 minutes.
  6. Add pasta and cook until tender, about 8–10 minutes.
  7. Stir in Parmesan cheese if using.
  8. Garnish with parsley and serve warm.
