Description
Soft, bite-sized peanut butter cookie bites that are quick to make, rich in peanut flavor, and perfect for snacking, parties, or dessert trays.
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix peanut butter, granulated sugar, and brown sugar until smooth.
- Add egg and vanilla extract, mixing well.
- Stir in baking soda and salt until fully combined.
- Fold in chocolate chips if using.
- Scoop tablespoon-sized portions and roll into balls. Place on prepared baking sheet.
- Lightly press each ball with a fork if desired.
- Bake for 10–12 minutes until edges are set.
- Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- Do not overbake; cookies firm up as they cool.
- Use natural peanut butter for stronger flavor.
- Store in an airtight container for up to 5 days.
