Peanut Butter Cookie Bites are soft, chewy, and bite-sized treats made with rich peanut butter flavor, perfect for snacking, parties, or quick desserts.
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: mini chocolate chips or peanut butter chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together peanut butter, butter, brown sugar, and granulated sugar until smooth.
- Add egg and vanilla extract; mix until combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until a dough forms.
- Fold in optional chocolate chips if using.
- Scoop tablespoon-sized portions of dough and roll into balls.
- Place on baking sheet and gently flatten with a fork.
- Bake for 10–12 minutes until edges are lightly golden.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Do not overbake to keep the centers soft.
- Dough can be chilled for easier handling.
- Store in an airtight container for up to 5 days.
