Description

This Philly Cheesesteak Quesadilla combines the bold, savory flavors of a classic Philly cheesesteak with the crispy, cheesy goodness of a quesadilla. Tender steak, sautéed onions and peppers, and melted provolone or mozzarella are tucked between golden tortillas for an easy and delicious meal.


Ingredients

  • 1 tbsp olive oil
  • 1/2 lb (225g) thinly sliced ribeye steak or sirloin
  • 1/2 onion, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 1 tsp garlic powder
  • 1 tsp Worcestershire sauce
  • Salt and black pepper, to taste
  • 4 large flour tortillas
  • 1 1/2 cups shredded provolone, mozzarella, or Monterey Jack cheese
  • 1 tbsp butter, for cooking


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced onions and peppers. Cook for 5–7 minutes until softened and lightly caramelized. Remove from the skillet and set aside.
  3. Add steak to the same skillet and season with garlic powder, Worcestershire sauce, salt, and pepper. Cook for 3–5 minutes, stirring until browned and tender.
  4. Return the cooked onions and peppers to the skillet and toss everything together. Remove from heat.
  5. Place one tortilla in a large skillet or griddle over medium heat. Sprinkle with some cheese, then add a portion of the steak and pepper mixture. Top with more cheese and another tortilla.
  6. Cook for 2–3 minutes per side, pressing gently with a spatula, until the tortilla is golden and the cheese is melted.
  7. Repeat with remaining ingredients to make additional quesadillas.
  8. Cut into wedges and serve warm with your favorite dipping sauce (cheese sauce, ranch, or chipotle mayo).

Notes

  • For extra flavor, spread a thin layer of mayo or cheese whiz inside the quesadilla before cooking.
  • Use shaved deli roast beef for a quick version.
  • Can be made ahead and reheated in an air fryer or skillet for crispiness.
