Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded mozzarella or cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Extra breadcrumbs for coating
  • Oil for frying or baking spray


Instructions

  1. In a bowl, combine mashed potatoes, mozzarella, Parmesan, egg, breadcrumbs, garlic powder, paprika, salt, and pepper.
  2. Mix until the mixture is firm enough to shape. If too soft, add extra breadcrumbs.
  3. Roll into small balls and coat each one lightly in breadcrumbs.
  4. To fry: Heat oil in a pan and fry potato balls for 2–3 minutes until golden.
  5. To bake: Preheat oven to 400°F (200°C), place balls on a lined tray, spray with oil, and bake for 12–15 minutes.
  6. Serve hot with ketchup, aioli, or spicy mayo.
