Ingredients

  • 2 lbs sweet potatoes, peeled and cubed
  • 3 tbsp olive oil
  • 1/4 cup pure maple syrup
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato cubes with olive oil, maple syrup, brown sugar, cinnamon, nutmeg, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes in a single layer on the baking sheet.
  4. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.
