Ingredients
- 2 lbs sweet potatoes, peeled and cubed
- 3 tbsp olive oil
- 1/4 cup pure maple syrup
- 1 tbsp brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potato cubes with olive oil, maple syrup, brown sugar, cinnamon, nutmeg, salt, and pepper until evenly coated.
- Spread the sweet potatoes in a single layer on the baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.
- Drizzle with additional warm maple syrup before serving, if desired.

- For extra crispiness, roast an additional 5–10 minutes.
