Description

Shrimp Scampi Linguine is a classic Italian-American pasta dish featuring tender shrimp sautéed in garlic butter, tossed with linguine and finished with lemon juice, white wine, and fresh parsley.


Ingredients

  • 12 oz linguine pasta
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine
  • 1 tablespoon fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Cook linguine according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. In a large skillet over medium heat, melt butter with olive oil.
  3. Add garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  4. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
  5. Pour white wine into the skillet and simmer for 2–3 minutes, allowing it to reduce slightly.
  6. Stir in lemon juice and return shrimp to the pan.
  7. Add cooked linguine and toss to combine. Add reserved pasta water as needed to loosen the sauce.
  8. Sprinkle with fresh parsley and Parmesan cheese if desired. Serve immediately.

Notes

  • Do not overcook the shrimp to keep them tender.
  • Substitute chicken broth for wine if preferred.
  • Add extra lemon zest for brighter flavor.
  • Serve with crusty bread to soak up the sauce.
