Description
Shrimp Scampi Linguine is a classic Italian-American pasta dish featuring tender shrimp sautéed in garlic butter, tossed with linguine and finished with lemon juice, white wine, and fresh parsley.
Ingredients
- 12 oz linguine pasta
- 1 lb large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine
- 1 tablespoon fresh lemon juice
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cook linguine according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
- In a large skillet over medium heat, melt butter with olive oil.
- Add garlic and red pepper flakes, sauté for 30 seconds until fragrant.
- Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
- Pour white wine into the skillet and simmer for 2–3 minutes, allowing it to reduce slightly.
- Stir in lemon juice and return shrimp to the pan.
- Add cooked linguine and toss to combine. Add reserved pasta water as needed to loosen the sauce.
- Sprinkle with fresh parsley and Parmesan cheese if desired. Serve immediately.
Notes
- Do not overcook the shrimp to keep them tender.
- Substitute chicken broth for wine if preferred.
- Add extra lemon zest for brighter flavor.
- Serve with crusty bread to soak up the sauce.
