Ingredients

  • 2 lbs beef stew meat or chuck roast, cut into chunks
  • 1 1/2 lbs baby potatoes, halved
  • 1/2 cup butter, melted
  • 5 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil (optional, for browning)
  • 2 tbsp chopped fresh parsley (for garnish)


Instructions

  1. Optional: Heat olive oil in a skillet and sear beef chunks for 2–3 minutes per side to enhance flavor.
  2. Place potatoes in the bottom of the slow cooker. Add beef bites on top.
  3. In a bowl, whisk together melted butter, garlic, Worcestershire sauce, onion powder, paprika, thyme, parsley, salt, and pepper.
  4. Pour the garlic butter mixture evenly over the beef and potatoes.
  5. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until beef is tender and potatoes are soft.
  6. Toss gently before serving to coat everything in the sauce.
  7. Garnish with fresh parsley and serve warm.

Notes

  • Searing the beef adds richer flavor but can be skipped for convenience.
  • Use Yukon gold potatoes for the creamiest texture.
