Description

Smoky Paprika Chicken with Blackberry Jalapeño Melt is a bold and flavorful dish featuring juicy paprika-spiced chicken breasts topped with a sweet, spicy blackberry-jalapeño compote and melted cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 cup fresh blackberries
  • 1 jalapeño, finely minced (seeds removed for less heat)
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • Fresh cilantro or parsley, chopped (optional garnish)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub chicken breasts with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat a skillet over medium-high heat and sear chicken for 3–4 minutes per side until lightly browned.
  4. Transfer chicken to a baking dish.
  5. In a small saucepan, combine blackberries, jalapeño, honey, and balsamic vinegar. Cook over medium heat for 5–7 minutes, gently mashing until thickened.
  6. Spoon the blackberry jalapeño mixture evenly over the chicken.
  7. Top each piece with shredded cheese.
  8. Bake for 15–18 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  9. Garnish with fresh herbs if desired and serve hot.
