Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 1/2 teaspoons smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- 1 cup fresh blackberries
- 1 jalapeño, finely minced (seeds removed for less heat)
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 cup shredded mozzarella or Monterey Jack cheese
- Fresh cilantro or parsley, chopped (optional garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Rub chicken breasts with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat a skillet over medium-high heat and sear chicken for 3–4 minutes per side until lightly browned.
- Transfer chicken to a baking dish.
- In a small saucepan, combine blackberries, jalapeño, honey, and balsamic vinegar. Cook over medium heat for 5–7 minutes, gently mashing until thickened.
- Spoon the blackberry jalapeño mixture evenly over the chicken.
- Top each piece with shredded cheese.
- Bake for 15–18 minutes, or until chicken is cooked through and cheese is melted and bubbly.
- Garnish with fresh herbs if desired and serve hot.
