Description

A soft and fluffy pull-apart garlic bread made with sourdough discard, buttery, cheesy, and loaded with garlic for a perfect side dish or snack.


Ingredients

  • 1 1/2 cups sourdough discard
  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1/2 cup warm water
  • 1/4 cup olive oil
  • 1/4 cup melted butter
  • 4 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp black pepper


Instructions

  1. In a small bowl, combine the warm water and sugar, then sprinkle the active dry yeast over the top. Let it sit for 5 minutes, or until it becomes foamy.
  2. In a large bowl, combine the sourdough discard, flour, and salt. Add the yeast mixture and olive oil, then stir until a dough forms.
  3. Knead the dough on a lightly floured surface for 5-7 minutes, or until smooth and elastic. Cover with a damp cloth and let it rise for 1 hour, or until it doubles in size.
  4. Preheat the oven to 375°F (190°C). Grease a 9×9-inch square baking dish or a round cake pan.
  5. Once the dough has risen, punch it down and divide it into small, bite-sized pieces. Arrange the dough pieces in the prepared baking dish, stacking them in layers.
  6. In a small bowl, combine the melted butter, garlic, mozzarella cheese, Parmesan cheese, parsley, and black pepper. Pour the garlic butter mixture evenly over the dough pieces.
  7. Bake for 25-30 minutes, or until the bread is golden brown and the cheese is bubbly and melted.
  8. Let the bread cool for a few minutes before serving. Garnish with extra fresh parsley, if desired.

Notes

  • If you don’t have sourdough discard, you can use all-purpose flour, active dry yeast, and a bit of buttermilk or yogurt as a substitute for the sourdough base.
  • For extra garlic flavor, you can sprinkle some garlic powder on top of the bread before baking.
