Stuffed Bell Pepper Soup is a hearty and comforting one-pot meal inspired by classic stuffed peppers. It combines ground beef, rice, bell peppers, and tomatoes in a rich, savory broth for a satisfying family-friendly dinner.
Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 bell peppers (red, green, or yellow), diced
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups beef broth
- 1 cup cooked white rice
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- Fresh parsley, chopped (optional garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Add diced onion and bell peppers. Cook for 4–5 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper. Stir well.
- Bring to a boil, then reduce heat and simmer for 15–20 minutes.
- Stir in cooked rice and simmer for an additional 5 minutes.
- Taste and adjust seasoning if necessary.
- Garnish with fresh parsley and serve hot.
Notes
- You can substitute ground turkey for a lighter option.
- Use uncooked rice by adding it with the broth and increasing simmer time by 15 minutes.
- For a low-carb version, replace rice with cauliflower rice.
- Store leftovers in the refrigerator for up to 4 days or freeze for up to 2 months.
