Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered erythritol or monk fruit sweetener
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 4 oz sugar-free dark chocolate, chopped
  • 2 tbsp unsalted butter (for filling)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix almond flour, cocoa powder, powdered sweetener, and salt.
  3. Stir in melted butter and vanilla extract until a dough forms.
  4. Press the mixture evenly into a tart pan.
  5. Bake crust for 10–12 minutes, then let cool.
  6. In a saucepan, heat heavy cream over medium heat until just simmering.
  7. Remove from heat and add chopped sugar-free chocolate and butter.
  8. Stir until smooth and glossy.
  9. Pour filling into cooled crust and smooth the top.
  10. Refrigerate for at least 2 hours until set.
  11. Slice and serve chilled.
