Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tbsp sun-dried tomato oil (optional, for extra flavor)
  • Fresh basil, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt, pepper, paprika, and Italian seasoning.
  2. Place the chicken in the bottom of the crockpot.
  3. Add the chopped sun-dried tomatoes and garlic on top.
  4. In a bowl, whisk together heavy cream, chicken broth, Parmesan cheese, and red pepper flakes.
  5. Pour the sauce evenly over the chicken.
  6. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours until chicken is tender.
  7. Stir the sauce before serving to blend flavors.
  8. Garnish with fresh basil and serve over pasta, rice, or potatoes.

Notes

  • For a thicker sauce, leave the lid off during the last 20–30 minutes.
  • Substitute chicken thighs for extra juiciness.
  • Stir in spinach during the last 10 minutes for added nutrients.
