Description

Sweet Potato Brie Cranberry Bites are elegant, bite-sized appetizers made with roasted sweet potato rounds topped with creamy brie and sweet-tart cranberry sauce—perfect for holidays or party snacks.


Ingredients

  • 2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 6 oz brie cheese, cut into small cubes
  • 1 cup cranberry sauce (whole berry or jellied)
  • 1 tbsp honey (optional)
  • Fresh rosemary or thyme leaves for garnish (optional)


Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast for 20–25 minutes, flipping halfway, until tender and lightly browned.
  4. Top each warm sweet potato slice with a cube of brie. Return to the oven for 3–4 minutes until the brie softens.
  5. Spoon a small amount of cranberry sauce over the melted brie.
  6. Drizzle with honey if desired and garnish with rosemary or thyme.
  7. Serve warm or at room temperature.

  • Use mini rounds of brie for easy portioning.
  • Add chopped pecans for crunch.
