Sweet Potato Brie Cranberry Bites are elegant, bite-sized appetizers made with roasted sweet potato rounds topped with creamy brie and sweet-tart cranberry sauce—perfect for holidays or party snacks.
Ingredients
- 2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
- 2 tbsp olive oil
- Salt and pepper, to taste
- 6 oz brie cheese, cut into small cubes
- 1 cup cranberry sauce (whole berry or jellied)
- 1 tbsp honey (optional)
- Fresh rosemary or thyme leaves for garnish (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Spread evenly on the baking sheet.
- Roast for 20–25 minutes, flipping halfway, until tender and lightly browned.
- Top each warm sweet potato slice with a cube of brie. Return to the oven for 3–4 minutes until the brie softens.
- Spoon a small amount of cranberry sauce over the melted brie.
- Drizzle with honey if desired and garnish with rosemary or thyme.
- Serve warm or at room temperature.
Notes
- Use mini rounds of brie for easy portioning.
- Add chopped pecans for crunch.
