Description

Light and airy choux buns filled with silky pistachio cream and topped with rich chocolate glaze. These elegant pastries combine nutty pistachio flavor with decadent chocolate for the ultimate dessert.


Ingredients

  • 1/2 cup water
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 4 large eggs
  • 1 cup heavy whipping cream
  • 1/2 cup pistachio paste
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp heavy cream (for glaze)
  • 2 tbsp chopped pistachios (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, milk, butter, and salt. Bring to a boil.
  3. Remove from heat and add flour all at once. Stir until dough forms a ball and pulls away from the sides.
  4. Return to low heat for 1-2 minutes to dry slightly.
  5. Transfer to a bowl and cool for 5 minutes.
  6. Add eggs one at a time, beating well after each addition until smooth and glossy.
  7. Pipe or spoon small mounds onto baking sheet.
  8. Bake for 20-25 minutes until puffed and golden. Cool completely.
  9. Whip heavy cream with powdered sugar and vanilla, then fold in pistachio paste.
  10. Fill cooled choux buns with pistachio cream using a piping bag.
  11. Melt chocolate chips with heavy cream until smooth and dip tops of buns.
  12. Garnish with chopped pistachios and allow glaze to set before serving.
