Description

Ingredients

  • 2 cups mashed potatoes (about 1 lb or 450g cooked potatoes)
  • 2 tbsp unsalted butter
  • 1/2 cup all-purpose flour (plus extra for dusting)
  • 1/2 tsp salt
  • 1/4 tsp black pepper (optional)


Instructions

  1. Peel and boil potatoes in salted water until tender. Drain and mash until smooth while still warm.
  2. Add butter to the warm potatoes and stir until melted and combined.
  3. Mix in flour and salt, forming a soft dough. Add a touch more flour if sticky.
  4. Turn the dough onto a floured surface and gently roll or pat into a circle about 1/4 inch (6mm) thick.
  5. Cut the circle into four equal wedges or ‘farls.’
  6. Heat a dry skillet or griddle over medium heat. Cook the farls for about 3–4 minutes on each side, until golden brown and slightly crisp.
  7. Serve warm with butter, fried eggs, or alongside bacon for a traditional Irish breakfast.
