Ingredients

  • 2 slices sourdough or whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 tsp lemon juice
  • 1 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • Red pepper flakes (optional)
  • Everything bagel seasoning or sesame seeds (optional)


Instructions

  1. Bring a small pot of water to a boil. Gently add eggs and cook for 6-7 minutes for a jammy center.
  2. Transfer eggs to an ice bath for 2-3 minutes, then peel carefully.
  3. Toast the bread slices until golden and crisp.
  4. In a bowl, mash the avocado with lemon juice, olive oil, salt, and pepper.
  5. Spread mashed avocado evenly over the toasted bread.
  6. Slice the jammy eggs in half and place on top of the avocado.
