Description

Crispy, flavor-packed egg rolls stuffed with spicy chicken, peppers, cheese, and a bold Cajun-inspired seasoning blend.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 cup shredded pepper jack cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced green onions
  • 8–10 egg roll wrappers
  • 1 egg, beaten (for sealing)
  • Oil for frying
  • Ranch or spicy mayo for dipping


Instructions

  1. In a bowl, combine the shredded chicken, Cajun seasoning, garlic powder, onion powder, smoked paprika, cayenne, pepper jack cheese, bell peppers, and green onions.
  2. Lay an egg roll wrapper on a flat surface. Spoon 2–3 tablespoons of filling onto the lower third of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Brush the top corner with beaten egg to seal.
  4. Repeat with remaining wrappers and filling.
  5. Heat oil in a deep skillet or pot to 350°F (175°C).
  6. Fry egg rolls in batches for 3–4 minutes or until golden and crispy.
  7. Drain on paper towels and serve hot with ranch or spicy mayo.

Notes

  • Bake at 400°F (200°C) for 15–18 minutes for a lighter version.
  • Add cream cheese for an even creamier filling.
  • Swap chicken for shrimp or andouille sausage for a Cajun twist.
