Description
Crispy, flavor-packed egg rolls stuffed with spicy chicken, peppers, cheese, and a bold Cajun-inspired seasoning blend.
Ingredients
- 2 cups cooked shredded chicken
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 cup shredded pepper jack cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced green onions
- 8–10 egg roll wrappers
- 1 egg, beaten (for sealing)
- Oil for frying
- Ranch or spicy mayo for dipping
Instructions
- In a bowl, combine the shredded chicken, Cajun seasoning, garlic powder, onion powder, smoked paprika, cayenne, pepper jack cheese, bell peppers, and green onions.
- Lay an egg roll wrapper on a flat surface. Spoon 2–3 tablespoons of filling onto the lower third of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly. Brush the top corner with beaten egg to seal.
- Repeat with remaining wrappers and filling.
- Heat oil in a deep skillet or pot to 350°F (175°C).
- Fry egg rolls in batches for 3–4 minutes or until golden and crispy.
- Drain on paper towels and serve hot with ranch or spicy mayo.
Notes
- Bake at 400°F (200°C) for 15–18 minutes for a lighter version.
- Add cream cheese for an even creamier filling.
- Swap chicken for shrimp or andouille sausage for a Cajun twist.
